Spinach and Goat Cheese Bisque
serves 8
Ingredients
- 1 T olive oil
- 1 C sweet onion, chopped
- 4 C chicken broth
- 1 C dry white wine
- 1 C Yukon Gold potato, diced
- 2 lbs fresh baby spinach
- 1 t nutmeg, ground
- 1 C goat cheese
Instructions
- Saute the onion in olive oil until translucent. Add the chicken broth and potato, and boil until the potato is mushy. Add the nutmeg and spinach and continue boiling until the spinach is fully cooked. Stir in the goat cheese until fully melted.
- Puree the soup, adjust seasoning to taste, serve hot.
